Nutritional Quality of Our Food Source

You passed along a message recently from Annie Heath regarding a slide I use in some of my presentations that addresses the nutritional quality of our food source.  The slide states “If you ate one cup of spinach in 1954, the amount of iron you would receive is comparable to eating 60 cups of spinach today.” And next to that quote I have a picture of the amount of spinach in 1954 compared to 60 cups of spinach in 2003. I think it’s a powerful representation of what is happening to our food chain. I took the picture from a publication called Today’s Chiropractic and it was the November/December 2003 addition. The actual information for this article comes from a book called Empty Harvest, written by Dr. Bernard Jensen and published by Avery Publishing Group. I’ve read the book and it is excellent. Dr. Jensen was a chiropractor and truly a pioneer in whole food nutrition . He wrote many wonderful books, another one I would recommend for Juice Plus distributors is called Foods That Heal. We know that whole food nutrition is defined as the nutritional quality of a food source. We also know that with the evolution of modern agricultural practices our food has become a mere shadow of what it once was. Consequently much of our food lacks the nutritional quality necessary to sustain our health.

This is not a slam on farmers, quite the contrary. Farmers are some of the hardest working folks on the planet. American farmers, the U.S. and Canada produce record harvest and feed much of the world, much of it going to livestock.  There are huge demands placed on farmers to maximize the production of their soil. The demands on soil far exceed the soils ability to nourish the plants grown in that soil year after year. We know that healthy living soil is full of microorganism and all kinds of minerals; nutrients that plants need to grow and thrive. The fact that farmers can’t afford to rest their soil or choose to not incorporate organic methods of farming  causes them to rely on all kinds of chemicals, herbicides and pesticides which destroys the vital microorganisms, fungi  and bacteria that live in the soil and are critical to healthy soil and healthy plants. We are saturating our bodies with drugs to try to stop disease and saturating the Earth with chemicals to try to stop insects and plant diseases. Something must change if we do not want to go in the direction of disease and death.  Something that I learned from a friend of mine about 25 years ago while attending Chiropractic school in Iowa was really very profound. He had a very large farming operation outside of Davenport Iowa and he told me that the soil he farmed had no worms, no earthworms in the soil because of all the chemicals they had to use on the crops. I thought, wow that can’t be good! Earthworms breakdown organic matter in the soil, and deposit as much as seven to eighteen tons per year of nitrogen-rich waste which is a major contribution to renewal of topsoil. They also aerate the soil, which keeps it drained, and aids the penetration of plant roots.

 We are destroying our precious topsoil at an alarming rate.  Some of the farmers listening to this message can better explain this than I am but the fact is this: Our soil is exhausted, it is severely depleted of so many precious nutrients, minerals, and other critical components found in healthy soil that plants desperately need.  Consequently the plants grown in much of today’s soil is nutritionally deficient.  Those six or seven foot stalks of corn and those robust looking beans may look good out in the field, but they have lost much of their nutritional value. 

So when I share Juice Plus with someone and they tell me they are not interested in Juice Plus because they already eat plenty of fruits and vegetables every day I talk to them about the quality of the produce they are buying in their grocery store, and even if I come across that rare person who only eats organic, I still tell them that more is better.
